Basil Cranberry Salad

Here is the last recipe for the challenge. This is a great holiday salad and is sure to be a favorite by many. In a hurry I love pairing this salad up with a smoked pork chop, quick and delicious. That is what I did in the picture, but you can be creative if you wish to spend a bit more time. In the past I have done a stuffed chicken breast with a chocolate drizzle on top to compliment the cranberries. Pretty much you can be as creative as you want with so many flavors in the salad. Pork Chop with Basil Cranbery

 

Ingredients:

1 Pack of Fresh Basil (chopped)
150g Cranberries
150g Sliced Almonds
1 pint of Grape/Cherry Tomatos (cut in half)
1 English Cucumber (cut in 1/4 slices)
1/2 Medium Red Onion (Chopped)
Olive Oil
Balsamic Vinegar

1. Chop all the ingredients as needed.
2. Mix vegetables
3. Mix and pour 50/50 of Olive oil and Balsamic Vinegar
4. Serve on the side of protein of your choice.
